Because they were easier to build than the tesseract that they originally wanted to build
I always thought it was because the weight of the pyramid would collapse onto itself By building the pyramid with slightly sloping floors the pyramid would collapse structurally but actually become more stable with the weight and height.
Here are three other ideas:
-The pyramid represented the first land to appear at the beginning of time- a hill called 'Ben-Ben'.
-The pyramid had sloping sides so that the dead pharaoh could symbolically climb to the sky and live forever.
-The pyramid represented the rays of the sun.
Or maybe it was just to build an inerton field or even so the new-age folks would have cool hats
